Ingredients:
1 pound eggplant, unpeeled, cut into 1 inch cubes
3 plum tomatoes seeded and chopped
1 green onion
1 clove of garlic minced
2 tablespoons of chopped fresh basil leaves
Salt, pepper, and garlic powder to taste
Directions:
Preheat oven to 400 Fahrenheit
Lightly mist non stick making sheet with olive oil spray.
Place eggplant in single layer on the baking sheet so cubes don't touch.
Lightly mist olive oil spray on eggplant, sprinkle garlic powder
Make for 7-10 min, flip and repeat until tender w/ fork
In large serving bowl combine tomatoes, green onion, garlic, and basil.
Add Egplant, season w/ salt and pepper
Seriously so great on triscuit crackers! The bruchetta is only 79 calories per serving and 9 grams of fiber!
