1/4 cup orange juice

1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon sugar

Ingredients
1 cup cake flour
1 teaspoon cream of tartar
1/4 cup sugar twin
1 cup egg whites – 8 to 10 eggs
1/2 teaspoon vanilla extract

Thai Style Beef & Noodle Salad

A Healthy & Delicious Recipe!!

Serves - 4

Ingredients
10 ounces beef sirloin, trimmed well
1/2 teaspoon salt
8 ounces spaghetti
1/4 cup ketchup
3 tablespoons fresh lime juice
2 tablespoons low sodium soy sauce
2 teaspoons light brown sugar
1/4 teaspoon red pepper flakes
4 scallions, thinly sliced
1 large carrot, shredded
1 Granny Smith apple, diced into 1/3 inch pieces

Directions
1. Preheat broiler.
2. Sprinkle beef with 1/4 teaspoon of the salt.
3. Broil 4 to 6 inches from the heat for 3 to 4 minutes per side until medium rare.
4. Place beef on a plate and let it stand for 10 minutes.
5. Thinly slice the beef on the diagonal and cut slices into bite size pieces.
6. Reserve juices on the plate.
7. In a large pot of boiling water, cook the spaghetti accoring to package directions and drain well.
8. In a large bowl, combine remaining 1/4 teaspoon salt, ketchup, lime juice, soy sauce, brown sugar and red pepper flakes.
9. Add drained pasta and toss.
10. Add beef pieces, jucies from the plate, scallions, carrots and apples and toss well.
11. Serve at room temperature or chilled.

Banana Nut Bread

Makes: One loaf
Serving Size: 1/2 inch slice

Ingredients
1 cup ripe bananas, mashed
1/3 cup low fat buttermilk
1/2 cup packed brown sugar
1/4 cup margarine
1 egg
2 cup sifted all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans

Directions
Preheat oven to 350 degrees.
Stir together mashed bananas and buttermilk, then set aside.
Cream brown sugar and margarine together until light. Beat in egg. Add banana mixture and beat well.
Sift together flour, baking powder, baking soda, and salt, then add to liquid ingredients. Stir until well blended.
Stir in the nuts.
Pour into greased 9 by 5 inch loaf bread pan.
Bake for 50 to 55 minutes or until toothpick inserted in the center comes out clean.
Cool before slicing.

Oven Fried Fish

Serves - 6
Serving size - 1 cut piece (cut into 6 pieces)

Ingredients
2 pounds fish fillets, such as catfish or cod
1 tablespoon lemon juice, fresh
1/4 cup skim milk or 1 percent buttermilk
2 drops hot pepper sauce
1 teaspoon fresh garlic, minced
1/4 teaspoon white pepper, ground
1/4 teaspoon salt
1/4 teaspoon onion powder
1/2 cup cornflakes, crumbled or regular bread crumbs
1 fresh lemon, cut in wedges
Vegetable oil spray

Directions
1. Preheat oven to 475° F.
2. Wipe fillets with lemon juice and pat dry.
3. Combine milk, hot pepper sauce, and garlic.
4. Combine pepper, salt, and onion powder with cornflake crumbs and place on a plate.
5. Let fillets sit in milk briefly. Remove and coat fillets on both sides with seasoned crumbs. Let stand briefly until coating sticks to each side of fish.
6. Arrange on lightly oiled shallow baking dish.
7. Bake 20 minutes on middle rack with turning.
8. Cut into 6 pieces. Serve with fresh lemon.

Rice Pudding

Serves - 4
Serving size - about 1/4 cups each, plus 4 servings for another meal or snack

Ingredients
1 cup whole milk
1 cup water
1 cup rice, uncooked
2 eggs
1 cup evaporated milk
1 teaspoon vanilla
1/4 cup sugar
1/8 teaspoon ground cinnamon

Directions
1. Heat milk and water in a sauce pan.
2. Add rice and bring to a boil, lower heat to simmer, and stir mixture every 10 minutes.
3. Cook uncovered until rice is tender, about 30 minutes.
4. In large bowl, mix eggs, 3/4 cup evaporated milk, the vanilla, and sugar. Set aside.
5. Add remaining 1/4 cup evaporated milk to rice mixture.
6. Spoon 1 cup of rice mixture into egg mixture and stir. Pour egg rice mixture into remaining rice.
7. Heat pudding until it boils, stirring continuously.
8. Remove from heat, and sprinkle with cinnamon.

Pineapple Cooler

Ingredients
4 cups unsweetened pineapple juice
2 teaspoons lemon juice
1/2 teaspoon coconut extract
1 teaspoon vanilla extract
2 cups carbonated water

Directions
1. In a pitcher, combine the pineapple juice, lemon juice and the extracts, then chill.
2. Just before serving, stir in carbonated water, and serve over ice.
