Ingredients:
3 large egg(s)
2 cup fat-free egg substitute
3 egg white(s)
1 1/2 cup Kraft 2% Milk Reduced Fat Shredded Mozzarella Cheese
8 oz mushroom(s)
1 medium green pepper(s)
3/4 cup onion(s)
3 slices reduced-calorie bread
3 oz cooked lean ham
Instructions:
Heat oven to 350 degrees. Spray a 9x13" pan with pan spray and set aside. Cube bread slices and cover the bottom of the pan with the cubes - one layer. Slice mushrooms, dice green pepper and onion and saute in frying pan, using pan spray to keep veggies from sticking. Cube ham and add to veggies. Spread veggie and ham mixture over layer of bread, then sprinkle half the cheese over that. Mix together eggs, egg substitute and egg whites and pour over rest of ingredients in pan. Sprinkle rest of cheese over the top. Bake for 35 - 40 minutes or until fork comes clean when stuck in the center of the casserole.
