Chinese Chicken & Noodles

Ingredients:
6 oz. bean threads:
Vegetable cooking spray
1/2 cup fat free chicken broth
1 cup broccoli flowerets:
1 carrot, bias- sliced
1/2 cup celery, bias sliced
1/2 cup snow peas, sliced horizontally
4 oz. chopped chicken breast
4 Tbsps. reduced-sodium soy sauce

Instructions:
1. Cook bean threads according to directions; drain and leave in a colander 2. Meanwhile, spray a large skillet with cooking spray and heat to medium-low; add chicken broth, broccoli, and carrots and stir fry for 2 minutes, then add remaining vegetables and fry for a few more minutes.
3. Add chicken to vegetable mixture, and after 1 minute, add add 2 tablespoons of soy sauce to mixture and coat evenly over vegetables and chicken.
4. While mixture is cooking, add 1/2 of noodles to a small skillet sprayed with cooking spray; pour 1 Tbsp of soy sauce and cook for a few minutes until noodles are browned. Repeat with remaining noodles and 1 Tbsp soy sauce.
5. Continue heating vegetable and chicken mixture until vegetables are crispy. Divide noodles, chicken, and vegetables, evenly among 4 plates
