Turkey Breast with Mustard Sage Crumbs

Ingredients:
1/2 cup Atkins Bread Crumbs
1/4 cup chopped fresh parsley
1 teaspoon dried crumbled sage leaves
1/2 teaspoon dried thyme
1/4 cup butter
1 teaspoon salt, divided
1 boneless, skinless turkey breast (about 2 pounds)
1/4 teaspoon pepper
1 1/2 tablespoons country-style mustard

Instructions:
1. Heat oven to 425º F. In a small bowl combine breadcrumbs, parsley, sage, thyme, butter and 1/2 teaspoon salt.
2. Season turkey with remaining salt and pepper. Place turkey on a rack in a roasting pan. Brush mustard over top and sides of turkey. Pat breadcrumb mixture over mustard.
3. Roast turkey 20 minutes; reduce heat to 350º F and cook 25 minutes more or until an instant read thermometer, inserted in center, registers 160º F. Let turkey stand 10 minutes before carving into slices.
