Cranberry-Walnut Brown Rice Salad

Ingredients:
2 cup cooked brown rice
1/2 cup dried cranberries, sweetened
11 oz canned mandarin oranges in light syrup, drained
1/2 cup chopped walnuts
2 medium scallion(s), chopped
2 Tbsp vinegar, preferably sherry vinegar
2 tsp olive oil
1/2 tsp table salt
1/4 tsp black pepper, ground
Instructions:
1. In a large bowl, combine rice, cranberries, oranges, walnuts and scallions. Toss to combine.
2. In a small bowl, whisk together vinegar, oil, salt and pepper. Add dressing mixture to rice mixture and toss to combine. Yields about 2/3 cup per serving.
