Shrimp Salad, Weight Watchers

Shrimp Salad

Servings: 4
Preparation Time:15 Minutes
Cooking Time: 2 Minutes
Level of Difficulty: Easy

Ingredients:
1 pound shrimp, large, peeled and deveined
1/3 cup fat-free mayonnaise
2 medium stalk celery, chopped
3 Tbsp red onion(s), minced
2 Tbsp parsley, fresh, chopped
1 Tbsp capers, drained
2 tsp Dijon mustard
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste


Instructions:
1. Boil shrimp in a large pot of rapidly boiling water for about 2 minutes, until bright pink and cooked through. Drain, rinse under cold water and drain again; set aside.
2. In a large bowl, combine mayonnaise, celery, onion, parsley, capers and mustard; mix well. Stir in shrimp; season to taste with salt and pepper. Serve at room temperature or chilled. Yields about 1 1/2 cups per serving. (Note: This preparation method also works well with cooked, cubed chicken breast.)

Thanks for salad dish,Salad is a most important for our health.Through salad we can reduce more weight.Salad is a mixture of fruits or vegetables.In lunch if you can include salad then you can reduce weight very fast.

I love to have a salad even for dinner sometimes with some grilled chicken or shrimp, just try to avoid those really high calorie salad dressings. You may think that you are always eating healthy by ordering salads but beware of what comes on the salad and I always try to ask for them to bring my dressing on the side.
