Cucumber Tomato Salad

Ingredients:
1/2 cup rice vinegar
3 Tbsp Equal Spoonful
3 cups unpeeled 1/4 inch thick cliced cucumbers
2 cups chopped tomato
1/2 cup chopped red onion
1 salt and pepper to taste

Instructions:
Combine vinegar and Equal.
Add cucumbers, tomato and onion. Season to taste with salt and pepper; mix well.
Refrigerate covered, at least 30 minutes before serving.
