French Toast with Strawberry Salsa

Level of Difficulty: Easy

Ingredients:
2 cups strawberries, chopped
14 oz canned pineapple, water-packed, drained (use chunks or tidbits)
1 medium garlic clove(s), chopped
2 Tbsp cilantro, fresh, chopped
1 Tbsp fresh lime juice
1 tsp sugar
1 serving cooking spray (5 one-second sprays per serving)
16 oz fat-free egg substitute
1/2 cup fat-free skim milk
2 Tbsp ground cinnamon
16 slices reduced-calorie bread, preferably whole grain


Instructions:
1. Combine strawberries, pineapple, garlic, cilantro, lime juice and sugar in a medium-size bowl; set aside until ready to use.
2. Coat a large skillet with cooking spray and heat over medium-heat.
3. Combine egg substitute, milk and cinnamon in a large bowl. Dip bread into egg mixture, turn to coat and cook until slightly browned, 2 to 3 minutes per side. Remove to serving platter, keep warm and repeat with remaining ingredients. Serve topped with the strawberry salsa. Yields 2 pieces of French toast and about 1/4 cup of salsa per serving.
